Summerin' Succotash

The end of summer and beginning of fall bring about some of the most flavorful produce of the year.  Put them to good use with this easy and delicious recipe.

Honey-Apple Succotash 
1 cup sweet corn
1/2 cup green beans, chopped
1/2 cup green bell pepper, chopped
1/2 cup red bell pepper, chopped
3/4 cup red onion, chopped
1 large sweet potato, chopped 
1 - 2 cups turkey kielbasa or sausage
1 cup apple, chopped
Honey (to taste)
Olive Oil

Salt and Pepper 

Preheat oven to 400 degrees.
Toss ingredients in large bowl.  Drizzle with honey.  Toss ingredients with olive oil, add salt and pepper.  Spread into single layer on half sheet pan.  Roast for 35 minutes, stirring twice.
Let cool for 5 minutes. Enjoy!

- The great thing about this recipe is that you can add or subtract ingredients as they are available to you.  Try using local produce from farmers markets or gardens! 
- To reheat, toss with butter and saute.
